1. Key to the Heart and Blood Vessels:
Olive oil's primary component is oleic acid, which helps lower bad cholesterol and is a powerful antioxidant, helping to control blood pressure.
2. Significant Anti-Inflammatory Effects:
Olive oil has potent anti-inflammatory properties, which can reduce the risk of modern diseases such as heart disease, metabolic syndrome, and cancer.
3. Promoting Digestion and Weight Control:
Olive oil helps lubricate the intestines, relieve constipation, and promote the growth of healthy bacteria. It also provides a strong sense of fullness, which helps with weight control. It is rich in vitamins, which are important for blood clotting and bone health.

Below is the full process of the olive oil mill
1. Transport
Freshly picked olives are transported via conveyor belts to the next process.
2. Sorting and Cleaning
Olive oils must be processed within 24 hours of harvesting to prevent mold and mildew. They are sorted on conveyor belts to remove impurities such as leaves and twigs, and rinsed with clean water to remove dust.
3. Crushing and Grinding
After cleaning, the olives are crushed and ground in a grinder to form a paste for pressing.
4. Hydraulic Oil Pressing
The ground olive paste is pressed in a hydraulic olive oil machine, producing an oil-water mixture.
5. Disc centrifuge
The oil-water mixture is fed into a centrifuge, which rotates at high speeds to separate the different substances based on their specific gravity, producing olive oil. This is currently the most popular, efficient, and hygienic method.
6. Filtration
Olive oil that has undergone centrifugal filtration may still contain fine suspended matter. This is filtered through an oil filter to produce a cleaner, clearer olive oil.

Olive Oil Mill Considerations
For a Olive oil mill, there are some consideration which is needed to be focus on.
1. Raw Material Quality:
The shorter the time from harvest to enter into the olive oil machine, it is the better to prevent olive fermentation.
2. Operating Temperature:
When using the olive oil mahcine, The temperature throughout the pressing process should be kept below 20°C to maximize the preservation of the raw material's aroma and phenolic compounds.
3. Working Environment:
A closed, low-temperature, and hygienic working environment is crucial for preventing oil spoilage.
4. Oxygen Isolation:
Minimize oxygen exposure during crushing and storage to prevent oxidation.
